台湾台东 - Media OutReach - 2019年12月6日 - 呼应国际慢食潮流,以纯净的环境酝酿优质农特产品的台东县,吸引日本盛产南部铁器的岩手县超过167年历史的职人老店「OIGEN及源铸造」与台东县政府跨域合作,透过国际主厨产地之旅、实验料理及国际食农创生讲座,串联慢食节活动,要让世界认识台东的慢食风味。

 

台东县位于台湾东部,滨临太平洋,是一座位于山与海之间的城市。2015年县政府开始举办的「时令餐桌节」将农特产品以创意料理端上餐桌,搭配部落观光,融入原民文化,推动不同区域的慢食游程,提供旅客「从产地到餐桌」的食农体验,发展至今,形成独有的慢食文化。而「OIGEN及源铸造」则是日本东北地区南部铁器超过百年的铸铁器具名家,台日跨域连手向世人推广安心饮食、永续创生的理念。

 

台东县政府指出,这场活动于12月4至5日办理,邀请慢食协会国际本部选为世界料理人的奥田政行主厨以及东京银座「Yamagata San-Dan-Delo」餐厅主厨土田学,实地亲访在地农产食材产地,包含马兰市场、成功渔市等地,除了认识农渔生产环境外也收集食材,与长滨Sinasera 24主厨杨柏伟等人,发挥各地料理人创意,以铸铁锅具临场烹煮菜肴,演绎新慢食风味。而国际交流讲座则由主厨奥田政行主讲,「OIGEN及源铸造」社长及川久仁子、在地农友孙佩芳、黄瀚共同分享,透过不同领域、地域对于永续、安心的饮食文化,如何达到地方创生进行研讨及交流。

 

县长饶庆铃表示,台东做为一个什么都「慢」的城市,虽然慢,却慢得很有质感、很有道理,正好与日本的职人精神契合;台东的慢不是慢,是愿意去酝酿与成全,才能有惊人的魅力展现,期待未来能与世界各城市有更多的合作,营销台东的优质农产及慢食文化。
